If you're looking for a seasonal recipe that is nutrient dense and that everyone will LOVE, look no further. This pumpkin loaf recipe include healthy ingredients and even healthier flour (Khorasan being one of the healthiest wheats to consume).
Makes 2 loaves (or 3 small loaves)- so you can eat one and freeze one for later. Or just eat them both while they are fresh :)
Here is the recipe:
Ingredients:
- 1.5 cups honey (1 cup if you don't like it super sweet)
- 1 cup coconut oil (olive oil or butter will work as well)
- 4 eggs
- 2 cups pumpkin puree
- 2/3 cup water
-2 cups Khorasan flour
-1 cup Red Fife Flour
-1.5 teaspoons salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 teaspoons baking soda
Directions:
In a mixing bowl combine honey and oil and mix with Danish whisk or mixing spoon until mostly combined. Add eggs and mix again. Add pumpkin puree and water and mix well until fully incorporated.
Add Khorasan and Red Fife flour, salt, cinnamon, nutmeg and baking soda. Mix well until everything is combined (don't overmix).
Pour into 2 greased bread pans and bake @ 350 degree F for 50-60 mins or until a toothpick comes out clean. Don't over bake as this will affect your moistness. you're better off to check it early than to let it bake too long.
Once baking is done let cool in pans for 5 mins. before transferring onto cooling rack to fully cool.
