Originating from Scotland, and later making its way to Canada, this ancient grain is known as the "baker's dream" for its unique baking properties and rich flavor.
Because of its softer gluten strength, it is great in cookies, cakes and pastries and makes very soft pizza dough.
We love using it for pizza dough, pancakes and biscuits
Here are some baking tips when using Red Fife flour:
- Adjust Liquid Content: Red Fife Flour tends to absorb more moisture than other flours, so start by using slightly less liquid in your recipes and adjust as needed to achieve the desired consistency.
- Experiment by blending it with other flours to achieve the perfect texture in your recipes.

We are loving the flour. We previously avoided gluten because of the nasty effects it caused on our bodies. It's so lovely to eat baking and perogies again
Very soft flour, learning to cook with it is interesting. So far Belgium Waffles has been all I've done... 1/2 Red Fife 1/2 all purpose found it a bit too soft, dropped to 1/3rd and cook a bit longer and it seems to be a wonderful waffle.
I love baking with flour that I know what is in is, no additives that I can't even pronounce! It was so nice to order on line and have my order of flour within a couple of days, great service.
