The BEST homemade buns

If you're looking for an easy bun recipe to make with your All Purpose stone ground flour, here you go:

Ingredients:

-1/2 cup sugar

-3 cups warm water

-4 1/2 tsp active dry yeast

-2 large eggs

-1/2 cup oil (olive oil or melted tallow is what we use)

-1 tsp salt

-8-9 cups of West Country Mills All Purpose flour

Instructions:

Stir sugar in warm water in the bowl of a stand mixer (with dough hook attachment).

Sprinkle yeast over top. Let stand for 10 minutes.

Stir to dissolve yeast.

Mix in eggs, oil and salt.

Work in enough flour until dough starts pulling away from sides of bowl.

The dough should be slightly sticky, but floured enough to not stick to the sides of the bowl. It's better to start with less flour and add more.

Knead dough for 8-10 minutes until smooth and elastic.

Cut off 2.5 oz. sized pieces of dough and shape into balls.

Place dough balls into greased pans close together and cover with a tea towel.

Let stand in oven with light on for about 1 1/4 hours until doubled in size.

Bake in 375 degree F oven for about 16-18 minutes.

Turn out onto rack to cool.

If you desire, brush tops of warm buns with melted butter.

Enjoy!
